- Choron sauce (hollandaise sauce + ketchup + tarragon + tarragon vinegar)
- Onion, flour, egg, beer, salt + pepper
- Tomato, spring onions, aubergines, olive oil
Season the meat and cook it according to taste. Make a batter with the flour, egg, salt, pepper and beer. Dip the onion rings in this mixture and cook in a deep frying pan. Cut the aubergine into cubes and stir-fry, season the tomato and grill with the spring onions.
Arrange the meat on a plate with the aubergines, which are stuffed with the tomato and spring onions, garnish with the sauce, onion rings and parsley.
