Classic crab salad
- Tuna dressing, can of tuna
- Veal, stock
- Anchovies, capers, rocket, olive oil
In a blender, finely chop a little tuna, the capers and anchovies (according to taste) with a dash of fine olive oil and mix with the tuna dressing.
Cook the veal in the traditional way (45 mins) in the stock (celery, onion, carrot, thyme and bay leaf). You can also cook the meat in a frying pan, as this method also produces better results. Finely slice the cold meat, present it on a plate or bread roll and garnish with the sauce, capers, rocket and a splash of olive oil.
