In a blender, finely chop a little tuna, capers and anchovies (according to taste) with a splash of fine olive oil and mix with the tuna dressing. Cook the veal in the traditional way (for 45 mins) in stock (celery, onion, carrot, thyme and bay leaf). You can also cook the meat in the frying pan and this cooking method also produces better results. Finely slice the cooled meat, arrange it on a plate or bread roll and garnish it with the sauce, capers, rocket and a splash of olive oil.
